Eburon - (Belgium)

After a long career in the international wine industry in Australia, California, and Eastern Europe, a dream became reality. Some time later, Paul Molleman and Marco Tiggelman founded their own wine estate, located in Belgium’s oldest city, Tongeren. 2,000 years ago, this was the only Roman administrative capital within our borders. The first vineyards were carefully selected based on location and soil structure and were planted with Pinot Noir and Chardonnay. Additional vineyards followed, and by 2025, the estate is expected to encompass around 3 hectares of vineyards. The subsoil, rich in silex—a mix of clay, limestone, and silica—gives the wines exceptional minerality. At Eburon Estate, top-quality wines are crafted from grapes such as Pinot Noir, Chardonnay, and Auxerrois. While the estate firmly believes that the quality of the wine is primarily determined by the quality of the grapes, only the best equipment and facilities are used in the winery. The ultimate goal is to produce the finest wines that the terroir can offer.

The 2023 Auxerrois offers a brilliant expression of the grape variety, fully fermented and aged in barrel. The oak, sourced from the renowned François Frères Cooperage in Burgundy, is subtly woven into the wine, adding delicate vanilla tones to the refreshing layers of yellow fruit, juicy pear, and ripe melon. On the nose, the wine presents floral aromas, while the palate is marked by the classic low acidity of Auxerrois, resulting in a round and juicy mouthfeel.

The 2023 Chardonnay from this estate is a true standout, and with only 900 bottles produced, it is a rare gem. The wine reveals aromas and flavors of ripe tropical fruit, such as pineapple, mango, and juicy pear, supported by a refined minerality derived from the Silex soils. Aging in new, lightly toasted oak adds a subtle creaminess and elegance, resulting in a beautiful balance and a silky mouthfeel. The long, refined finish completes the experience.

Pinot Noir, often considered the most temperamental grape, challenges winemakers to stay sharp and meticulous. At EBURON, this challenge is met with finesse, as the grapes are first selected in bunches and then individually by hand, ensuring only the best grapes make it to the barrel. The result is an elegant Pinot Noir (12% alc.) with a seductive palate of bright red fruit, vibrant acidity, and refined, subtle tannins that give the wine structure and depth.
