Pinot Noir, often considered the most temperamental grape, challenges winemakers to stay sharp and meticulous. At EBURON, this challenge is met with finesse, as the grapes are first selected in bunches and then individually by hand, ensuring only the best grapes make it to the barrel. The result is an elegant Pinot Noir (12% alc.) with a seductive palate of bright red fruit, vibrant acidity, and refined, subtle tannins that give the wine structure and depth.

This refined Pinot Noir shows its best when served lightly chilled. Whether enjoyed as an aperitif or paired with a meal, the versatility of this wine is remarkable. It pairs beautifully with salads, fish dishes, risotto, pasta, and chicken, but also offers a surprisingly pleasant match with lightly spiced meats. A true discovery for the adventurous gourmet.

climate

The climate in Tongeren is characterized by cool, relatively dry winters and warm, relatively dry summers. Precipitation occurs throughout the year.

soil

Soil with a subsoil of Silex. This is a mixture of clay, limestone, and silica.

vinification

The vinification process is as meticulous as the grape selection itself. After harvesting, 90% of the grape bunches were destemmed, while 10% were added whole for a 24-hour cold maceration to ensure maximum extraction of color and phenols. Fermentation began two days later and lasted a total of two weeks. After gentle pressing, the wine was transferred to new, lightly toasted oak barrels from François Frères Cooperage in Burgundy. The malolactic fermentation also took place here, followed by an additional eight months of aging before bottling.
