Seductive aromas of blackberries and black cherries accompanied by hints of cassis, sage, white pepper, and cedar. On the palate, notes of blackberries and a touch of black plum (Malbec) come forward, leading into nuances of vanilla and leather. The fine tannins and perfectly balanced acidity ensure a wonderfully harmonious and persistent finish.
Delicious with a variety of meat dishes. Beef carpaccio, aged entrecote, lamb, bacon-wrapped dates, and a tasty hamburger, of course.
- climate
-
Mediterranean climate with warm, dry summers. Due to its location (surrounded by mountains), Santa Margarita Ranch is shielded from the hottest regions of Paso Robles and constantly benefits from coolness from the ocean. It is the most beautiful and coolest sub-appellation of Paso Robles. Ideal for the ripening of Cabernet Sauvignon.
- soil
-
Santa Margarita Ranch (an appellation, not a ranch or farm) is the southernmost part of Paso Robles. The soils here consist of millions of years old fossilized oyster beds, giving the wine an exceptionally refreshing and mineral character.
- vinification
-
Cabernet Sauvignon 95%, Malbec 4%, and Petit Verdot 1%. Fermentation takes place in stainless steel tanks at controlled temperature. Then the wine is aged in used barrels of 1-year-old for 13 months. Bottling follows thereafter. The wine is SIP (Sustainability In Practice) certified.
