Light yellow, with green reflection. Small bubbles rise in a cord-like fashion to slowly form the characteristic crown. The nose is refined with notes of exotic fruit, brioche and characteristics of ageing. Very pleasant, refined and persistent in the mouth. Dry, creamy and refreshing with an elegant, balanced and long finish.
Noble and tasteful aperitif with enough depth and complexity to match a wide range of dishes. Cava with Champagne allure.
- climate
-
A temperate Mediterranean climate with highs of 27.8ºC and lows of 2.6ºC. The annual average is 14.4ºC. Precipitation is between 500 and 600mm per year and there is average 2,548 hours sunshine per year. The Penedès has 3 levels of altitude (0-250m, 250-500m and 500-800m), each of which is influenced by the climate.
- soil
-
The soil is rich in clay and limestone. Here, too, the altitude plays a role. The lower the more sand and lime, the higher the more clay.
- vinification
-
Chardonnay 65% and Parellada 35%. The grapes are harvested at their optimal ripeness. After a very short maceration in the press, they are gently pressed and fermented in stainless steel tanks at a low temperature. After separate fermentation, the wine is blended and undergoes its 2nd fermentation in the bottle for at least 2 years.
