90% Sauvignon Blanc and 10% Semillon. Grapes are picked by hand and sorted in the cool of the morning. Fermentation on stainless steel at controlled temperature and short residence time. 50% of the Sauvignon is a short barrel aging for 8 months in a 600 liter barrel of French oak. Then blending with the rest of the Sauvignon and Semillon. Bottling in March one year after harvest.
