The Cévennes has a Mediterranean climate (hot, dry summers and mild winters), strongly influenced in the off-season by cooling winds from the north and by rains and coolness coming from the Pyrenees. Consequently, there can sometimes be very high precipitation in a short period of time. These temperature variations (also during the night) guarantee longer and better ripening of the grapes.

Manual picking with rigorous selection. After careful pressing, fermentation is started in inox barrels under a constant temperature of 24-26°C for 14 days. Afterwards, the wine rests on inox for 6 months and is bottled.
