The Cévennes have a Mediterranean climate (warm, dry summers and mild winters) that is strongly influenced in the intermediate seasons by cooling winds from the north and by rains and coolness coming from the Pyrenees. There can sometimes be a lot of precipitation in a short time. These temperature fluctuations (also during the night) guarantee a longer and better ripening of the grapes.

Manual picking with strict selection. After careful pressing, the fermentation is started in stainless steel vats at a constant temperature of 24-26°C for 14 days. Afterwards, the wine rests in stainless steel for 6 months and is bottled.
