Nice dark color with purple reflection in its youth. Aromas of blackberries, cassis, raspberries but also notes of Provencal herbs, forest floor and violets. Nice full and juicy taste in which fruit and structure are in perfect balance. A wine that can appeal to enthusiasts as well as laymen and is less difficult to digest than many comparable Rhône wines.
Its pleasant, smooth yet concentrated style makes it the perfect companion for many dinners and occasions. Red meat on the grill, lamb chops, Mediterranean stews, finer game and various cheeses. It is the first to join the summer barbecue.

The Cévennes have a Mediterranean climate (warm, dry summers and mild winters) that is strongly influenced in the intermediate seasons by cooling winds from the north and by rains and coolness coming from the Pyrenees. There can sometimes be a lot of precipitation in a short time. These temperature fluctuations (also during the night) guarantee a longer and better ripening of the grapes.

Manual picking. After gentle pressing, the grapes are aged individually in concrete vats and the fermentation is started using natural yeasts at a constant temperature of 24-26°C. Regular bâtonnage. After aging for about 6 months, the wine is bottled.
