Beautiful, light almost greyish rosé color. Soft, delicate nose with impressions of strawberries, raspberries and a hint of grenadine. Unfolds on the palate as round and refined with the same recurring red fruit. Soft and fine style with sufficient fresh acidity that keeps the wine captivating and lively. An indispensable and graceful companion on hot summer days.
Light style rosé that tastes perfect as a summer aperitif and wonderfully refreshing on a sunny terrace. You can also serve it with various snacks, tapas, salads or simply at a barbecue.
- climate
-
The Cévennes have a Mediterranean climate (warm, dry summers and mild winters) that is strongly influenced in the intermediate seasons by cooling winds from the north and by rains and coolness coming from the Pyrenees. There can sometimes be a lot of precipitation in a short time. These temperature fluctuations (also during the night) guarantee a longer and better ripening of the grapes.
- soil
-
The massif of the Cevennes is one of the last foothills of the Massif Central and is mainly dominated by calcareous soils with clay and boulders.
- vinification
-
Manual picking. After careful pressing, the juice is briefly kept in contact with the skins and the fermentation is started in stainless steel vats under controlled temperature (16-20°C). The combination of Cinsault and Grenache gris creates a beautiful light rosé color (gris). After a short stay of several months in stainless steel, the wine is bottled and released.
