Currently the sherry vinegar is part of the quality products certified by the Junta de Andalucia and its production is regulated by the Regulatory Council of Wine and Brandy of Jerez. The "Reserva Jerez vinegar" has aged a minimum of two years. In consequence these vinegars acquire unique characteristics of aging, because the same procedure as the Jerez wine are used, with the criaderas and solera systems. Thanks to these so traditional techniques of the Fernando de Castilla cellars, these vinegars acquire a great aroma.
