vinification

An old technique for fermenting white wines that has regained popularity in recent years, in which the skins, contrary to the usual course of events, do macerate with the must (6 months), after which the wine rests for another 7 months in oak barrels to increase complexity and flavor. This comes at the expense of fresh and fruity part as well as its elegance. This also gives the wine an orange color.
