The grapes are harvested early in the morning while the cool temperatures help preserve the structure of the grapes and limit the risk of oxidation, which can alter the grapes’ characteristic aromas and flavours. The grapes are pressed quickly and the free-run and press juices are separated. Vinification takes place at temperatures between 10 and 12°C in order to preserve all of the wine’s freshness, minerality and delectable flavour. The wine is aged for 4 months in stainless steel tanks.
